Itameshi (イタメシ) from ita (Italian) and meshi (meal) is Japan's interpretation of Italian cuisine. The style first emerged in the early 20th century as Western flavors found their way into Japanese kitchens, and gained widespread popularity in the 1970s when affordable, comforting Italian-inspired dishes resonated with a changing Japan.
